Taken from my grandmother's 1950 cookbook: 300 ways to serve eggs
Hopefully it can help out those who have a glut of eggs.


Fluffy egg nests
6 eggs
salt and pepper to taste
6 slices of hot toast

Seperate eggs leaving the yolk in the shell until ready to use.
Season whites with salt and pepper and beat until stiff enough for form sharp peaks.
heap onto toast and make a hollow in the center of each mound.
slip egg yolks into the hollow, season and bake at 350 until brown and yolks are firm.
Garnish with paprika and parsly if desired.

You may sprinkle grated cheese over eggs before baking, and/or add a slice of ham between the egg white mound and the toast.
This seems like it would work really well with duck eggs as much loft is in those whites.

Eggs New Orleans

2 1/2 C tomatoes
1/2 green pepper chopped
1 small onion chopped
1/2 C chopped celery
1 teaspoon sugar
3/4 teaspoon salt
1/8th teaspoon pepper
1 bay leaf
3/4 cup bread crumbs
4 eggs
1/2 cup grated cheddar cheese

Cook tomatoes, pepper onion, celery sugar, bay leaf and seasonings together for 10 minutes. Remove bay leaf, add bread crumbs and place in a casserole dish. break eggs on top, sprinkle with salt and pepper and cover with the cheese. bake at 350 for 15-20 minutes until eggs are firm and cheese has melted.

Eggs Benedict is always good. Make it into "Eggs Robin Hood" by adding slices or broiled tomato between the ham and the egg.

Eggs Doremus
4 tablespoons of butter
3 tablespoons of flour
3/4 teaspoon salt
1 teaspoon worchestershire sauce
2 cups milk
6 mushroom caps
6 tart shells (or one pie crust?)
1 1/2 cups minced chicken
6 eggs, poached

make a white sauce of 3 tablespoons of butter, the flour, salt, worcestershire sauce and milk.
brown mushrooms in 1 tablespoon of butter
fill shells (or pie crust) with hot minced chicken.
place eggs on top of chicken, top with mushrooms and serve with the sauce.

Toast, mashed potatoes or rice may be used in place of pie or tart shells. Can also use diced ham instead of chicken.


Egg Noodles

2 egg
2/4 teaspoon salt
1 1/3 cup of flour

Beat egg slightly
add salt and enough flour to make a stiff dough
knead well, let stand covered 1/2 hour
Roll out paper thin, spread on cloth to dry, must not be sticky or brittle.
Roll into rectangle and slice across roll into fine strips.
spread out to dry thoroughly.
when ready to use drop in boiling salted water and cook until done, about 10 minutes.


Just a few more ideas to get through those eggs.
