If anyone has this book, I would really like the Granola recipe in it. Also, there is an single serving Apple Crisp recipe that is really good.

Homemade Granola from Tightway Gazette, Vol. 1:

3/4 cup brown sugar
1/3 cup vegetable oil
1/3 cup honey
5 cups oatmeal
1/2 cup raisins (add after cooking the granola)
1/2 cup dry milk
3/4 teaspoon cinnamon
pinch of salt

Mix brown sugar, oil and honey in saucepan. Heat until the sugar dissolves. Combine dry ingredients in a large pan. Pour sugar mixture over dry mixture and mix well. Bake at 375 degrees for 10 minutes. Stir in raisins. Store in airtight container.

Optional add-ins: nuts, wheat germ, coconut, etc.

Sorry about that - crazy fingers today.

Apple Crisp - Top diced/sliced apple with crumb mixture. Crumb mixture is one teaspoon of each: brown sugar, flour, oatmeal and margarine or butter and a dash of cinnamon. Book just says cook in microwave - no time given.

I use that recipe all the time, but modified, of course - 4 cups of oatmeal, 1/4 cup crushed almonds, 1/4 cup wheat germ, and 1/2 cup chopped pecans instead of 5 cups of oatmeal. I also use appe pie spice instead of cinnamon, I thought the cinnamon was too strong. Instead of honey I use maple syrup. I also put strawberry-flavored craisins in it instead of raisins. We always have a container in the cupboard....yum! I cook mine for 30 minutes though, stirring every 10 minutes. I love that recipe. Will have to try the apple crisp.
