I love to make soup in our slow cooker during the winter. Especially that I can freeze the leftovers. What are some of your favorite recipes?

made this yesterday with some small twists.

Homemade Potato Soup

6 potatoes, pared and cut into bite-sized pieces
2 onions, chopped
1 carrot, pared and sliced
1 stalk celery, sliced
5 chicken bouillon cubes
1 tablespoon parsley flakes
4 cups water
1 1#8260;2 teaspoons salt
Pepper to taste
2 tablespoons butter
3 to 4 strips bacon, cooked and crumbled, optional
1 can (13 ounces) evaporated milk
Chopped chives

In slow cooker, place potatoes, onions, carrot, celery, bouillon cubes, parsley, water, salt, pepper, butter and bacon. Cover and cook on Low for 12 hours, or on High for 3 to 4 hours.

Stir in evaporated milk during the last hour. If desired, mash potatoes with a masher before serving. Serve topped with chopped chives.


What I did differently was simmer a ham bone in water in the crockpot all night to make a stock. Then I took out the bone and gristle, threw away the bones, drained off half the stock for dog food, and simmered all the soup ingredients in that stock for the recipe. Then after I added the milk and the rest of the leftover diced ham and about 20 minutes before serving I dropped some dumplings on top. It made it thicker like a stew, and was a delicious complete meal for 8, and leftovers to get me out of eating spaghetti tonight! LOL

Super Yummy Squash Bisque
(adapted from " Not your mother's slow cooker cookbook")

6 T butter - cut into 4 chunks
1 1/2 lbs zuccini (or any summer squash) ends trimmed & cut into 1" chunks
1 lg yellow onion - chopped
2 T basmati rice (heaping)
1 T fresh basil - chopped
3 C veggie or chicken broth
S & P to taste
1 C 1/2 & 1/2 or heavy cream
Croutons for garnish

*put squash, onion and butter in crock, cook on high for 30 min
*add rice, basil & broth cook on low 5-6 hrs
*puree with immersion blender (or transfer to regular blender in batches)
*add S&P and 1/2&1/2
*cook on low until warm 10-20 min do not boil
*serve w/ croutons

I found this is a great way to get rid of the extra squash, it also freezes well - put in quart jars BEFORE adding cream! Homemade croutons really make it sing (see blog link for crouton recipe)
