I got this recipe from an ancient falling apart cookbook of mine. It is so warm and golden and homey that I've named it the "Sunny Honey Cake"! I some times add a handful of golden raisins to it.

Sunny Honey cake

1 cup honey
1 cup applesauce
3 eggs
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
2 cups flour ( You can replace one cup of white flour with one cup of wheat flour, I've never tried it with all whole wheat flour because I think that it would make the cake too heavy)
1/2 teaspoon baking powder
1 teaspoon baking soda
1 cup strong brewed coffee/strong black tea


In a large bowl, mix together the first 3 ingredients.
In a separate bowl, combine the flour, baking powder, spices and baking soda.
Add the flour mixture to the wet stuff, alternating with the coffee/tea; beat until well mixed
Pour into one greased 9"x13" pan (or, alternatively, three 8" square pans).
Bake at 325F--60-90 minutes for the large pan, 60 minutes for the three smaller pans.
