I found this recipe from Prevention magazine in my emails this morning! It sound just scrumptious! Part of eating better for me, is finding recipes that tantalize my taste buds. =)
Harvest Salad Recipe This main dish salad recipe will satisfy your taste buds with turkey, apples, walnuts, blue cheese, dried fruits, and a flavorful dressing. harvest
The dried fruit adds texture to the dressing and flavor to the salad. Dried apricots instead of the cherries in the dressing and salad would add a boost of beta-carotene.
PREP TIME: 10 MINUTES MAKES 4 SERVINGS
DRESSING 1/4 cup orange juice 2 tablespoons tart dried cherries or dried cranberries 1 tablespoon olive oil 1 tablespoon balsamic vinegar
SALAD 8 cups mesclun or other baby lettuce 2 medium apples, chopped 8 ounces smoked or regular cooked turkey breast, cut into 1/2" pieces, or 6 ounces canned salmon, drained 1/2 cup walnut halves or pieces 1/4 cup finely chopped red onion 1/4 cup crumbled blue cheese 1/4 cup tart dried cherries or dried cranberries
1. To make the dressing: Place the orange juice and dried cherries or cranberries in a microwaveable bowl. Heat until warm, about 30 seconds. Add the oil and vinegar. Blend or process until smooth but slightly chunky. Refrigerate.
2. To make the salad: Toss the mesclun or lettuce, apples, turkey or salmon, walnuts, onion, blue cheese, and dried cherries or cranberries in a large bowl. Add the dressing.
Nutrition info per serving (3 cups): Calories 330, Total Fat 15 g, Saturated Fat 3 g, Sodium 170 mg, Carbohydrate 29 g, Dietary Fiber 7 g, Protein 23 g, Calcium 10%

thanks for sharing Annika - that sounds really good. I'd like it with grilled chicken I think. Might give it a try :) Hugs, Ruth

mmmmmmmmm.....that sounds yummy! Gonna try it! I'm thinking I'll try cranberries and apricots and plain turkey but Smoked Gouda instead of bluecheese! Wow! This is so versitile! Thanks Annika!
