Finally got the thumbs up from Hubby on a very simple biscuit recipe. He is a big fan of "Grand" biscuits. I know, I know, processed, well finally, I got one.
2 cups flour 2 1/2 tsp. baking powder 1 tsp baking soda 6 Tbsp chilled butter 1/2 tsp salt 3/4 cup buttermilk Mix, roll, cut and bake. 375 preheated oven. 20-30 minutes

I wonder if you could use reg milk instead of buttermilk or would you need the acid in buttermilk? Floyd hates buttermilk. |

Actually I used the (2% milk with the 1 Tablespoon vinegar) "buttermilk". I just don't buy buttermilk, I "make" it. Now I am searching for the perfect whole wheat bread recipe. I baked 2 loaves today, not bad, but a little heavy, and it has that little bitter taste. Practice makes perfect.

I'm going to try this with homemade buttermilk too and see if he can tell. He'll probably be so shocked that I made biscuits that he won't even notice. lol. I always buy frozen biscuits for just the two of us. I like Schwans best, but Pillsbury is good too. They have just raised in price so much lately. Wal-mart's are good too. |

After years of trying, I have finally got to the point I can make biscuits that are *almost* as good as my Mom's! She never measures and goes solely by the texture---something that's very difficult to copy long distance. You would not believe the clunkers I have baked. I finally learned, to make her biscuits, I did need to use buttermilk (my first attemps with 2% milk were not pretty), that I needed a soft wheat flour (not all flours are the same) and to get the same texture , I really did need Crisco (not something I use for any other cooking.) I even went on ebay and bought the same Pyrex bowl she uses---and as much as friends laughed, I really do think it made a difference!
I have a healthier version that I often make but sometimes, you just want comfort food from the past.
