I read somewhere that you can freeze peppers quite well but have no idea. Wouldn't mind knowing if canning is possible as I have a pepper explosion in my green house and other than salsa, which is why I grow them, not sure what to do.

I freeze banana peppers all the time. Like most peppers, they have a high water content, which means you can just chop them up and put them in the freezer (bags work better than jars, because you can keep more air away from them.) I did put up some pint jars this year (my first year of canning!) but I just heated the vinegar and then did a short water bath to seal. I suspect they will be on the soft side but haven't opened a jar yet to test. For my cayenne peppers, I simply clean and dry them off well (removing all of the stem) and then pack them in vinegar. While the USDA would advocate treating with a hot water bath, my family has made hot pepper vinegar this way for generations. I use a lot of both the peppers and the vinegar in my cooking.
