My husband's 39th birthday is Wednesday and I wanted to make him a cake tomorrow night, so that he can eat some all day :) Have a good, simply chocolate cake that you make that doesn't take a lot of effort?
I'd like to make a layer cake, though they stress me out a bit. Baking shouldn't make you swear

Here is our easy chocolate cake (from family circle may 2005)
1 cup flour 1 cup sugar 1/4 unsweetened cocoa powder 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 3/4 cup milk 1/4 cup solid (refrigerated) vegetable shortening 1 egg 1/2 tsp vanilla
Directions 1. Heat oven to 350, Grease and flour cake pan(s) 2. Combine flour, sugar, cocoa powder, baking powder, baking soda and salt in large bowl. With mixer at med speed, beat in milk, shortening, egg and vanilla; beat for 2 minutes. Pour the batter into the prepared pan. 3. Bake for 30 minutes or until wooden pick comes out clean. Cool in pan for 5 minutes and then remove cake to wire rack to cool comepletely.

Thanks, Emily--do you use a single 9 x 13 or do you use round cake pans for layer?

Might be too late, but for what it's worth, this is the chocolate cake recipe I use. It's incredibly easy, even my very picky dh loves it, it's very moist, and it's fairly allergy-friendly to boot! And it halves perfectly, if you want to make a small cake or a small batch of cupcakes. Also, I don't bother with putting the wet ingredients into different wells in the dry ingredients; I just dump it all together, and it's never come out less than terrific! I do layer cakes with this all the time. If I recall, it either makes 2 - 9" round thick layers or 3 - 9" round thin layers. Hmm, I think I might go make this now that I'm thinking about it! :)

Ingredients
* 3 cups all-purpose flour * 2 cups white sugar * 1 teaspoon salt * 2 teaspoons baking soda * 1/2 cup unsweetened cocoa powder * 3/4 cup vegetable oil * 2 tablespoons distilled white vinegar * 2 teaspoons vanilla extract * 2 cups cold water
Directions
1. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork. 2. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.
