Connie, I'm so sorry you are in pain, I am praying for you!

Mara, I love what your Grandma said, so sweet. Even though I have a honey, I'll have to try that on him

Tapioca Pudding is my comfort food. When I know I have to have dental work done I make a batch the day before. My Mom used to put peaches in hers.

If anyone is interested I have a recipe for Butterscotch Tapioca that is SO GOOD! Let me know and I will be happy to post it :)

I'm posting two...one for my mom's EASY rice pudding, and one of bread pudding that was a best-seller
at the restaurant I worked at. We served both with warm vanilla sauce (canned vanilla pudding, diluted 3
to 1 with milk, and warmed - "Thank You" brand canned pudding is THE best!).

MOOSER'S RICE PUDDING

1 c. uncooked rice
1 2/2 c. milk
2 Tsp. vanilla
2 eggs
1/3 - 1/2 c. sugar
1/4 cup raisins, optional
(nutmeg for the top)

Cook rice in 2 cups water. Mix the rest of the ingredients well, add them
to the rice in the pan. Bring to a boil, let boil 1 minute, then remove from heat.
Put in a large glass bowl or individual serving dishes, chill in the fridge. Enjoy!

CAFE BREAD PUDDING

8 eggs
1 1/2 c. sugar
1 tsp. salt
2 tsp. vanilla
1 1/2 qts. milk (6 cups)
4 oz. butter or margarine (1 stick)
8 slices cubed bread
1/2 tsp. nutmeg

1. In a bowl, beat eggs, sugar, salt & vanilla together.
2. In a pan, scald milk and melt butter, just float the stick in the milk.
Add this to the egg mixture and blend well to make custard.
3. Place cubed bread in the bottom of a greased, large lasagna pan, pour the
custard mix over the bread, and sprinkle the top with nutmeg.
4. Place the pan on a tray of HOT water, and bake at 350* F for 45 minutes, or
until set.

We baked ours in a convection oven, so yours may take a tad longer in a regular
oven. I give mine an extra 10 - 15 minutes to set.

Here's one for Cinco de Mayo!

Arroz con Dulce

3 C water
1 tsp salt
1 tsp whole cloves
1 Tblsp crushed fresh ginger
(1) 13.5 oz can of coconut milk
1 C regular, uncooked, short-grain rice
3/4 C sugar
1/2 C raisins

Directions:
Add water, salt, cloves and ginger to a deep sauce pan, Bring to a boil, sieve through a colander to remove spices.
Bring water to a boil again. Add coconut milk, rice and sugar. Cook covered over medium-low heat for about 20 minutes. Add raisins. Cook uncovered until the rice has absorbed all of the water (about 20 minutes more).
Cooking times may vary.
