Oh girls! This is SO GOOD!!! Read through the recipe first. It is time consuming but so worth it and it makes ALOT


Butterscotch Tapioca

10 cups water
¾ teaspoon salt
1 ¼ cup small pearl tapioca
2 cups dark brown sugar (no substitutes)
2 large eggs
1 cup milk
½ cup granulated sugar
½ cup plus 2 Tablespoons butter (no substitutes)
2 teaspoon vanilla extract

Bring the water and salt to a boil in a large deep saucepan. Sprinkle the tapioca pearls in and cook, uncovered over medium-heat for about 15 minutes, stirring often. Add the dark brown sugar, lower the heat a little and cook for 5 minutes longer.

In a small bowl, beat the eggs, milk and granulated sugar until well blended. Slowly stir in one cup of the hot tapioca mixture into the egg and milk mixture, then combine it with the rest of the tapioca mixture. Continue cooking over low heat, stirring often for about 10 minutes or until mixture bubbles.

In the meantime, heat the butter in a small saucepan over medium heat until it is light brown. Add to the bubbling pudding with the vanilla extract and mix well.

Pour into a 3 quart serving bowl and allow to cool to room temperature. Pudding takes about 6 hours to set. If refrigerating, bring to room temperature before serving.

Yield: 12-16 Servings.

This sounds divine, Sharon! I will print this off and make it this week. My husband LOVES tapioca and I LOVE butterscotch. Can't go wrong!

Hey, Sharon...do you think "halving" the recipe would work? Since it's only 2 adults and a wee one...even if I invited my mom over it would still be a heck of a lot of leftovers!!!

I don't see why you couldn't. I would try halving it myself if I knew my husband wouldn't complain about there not being enough
