I have a new friend and he will be coming over to help with yardwork on Saturday. Does anyone have any ideas what I can make for dinner? I would like it to be special, he is spending the day and working hard to help me. Thank you for any and all ideas!!

Sounds like you need something to throw in the crock-pot that will be done when the yard work is. When I get home from work, I will try to find something. Or go to www.allrecipes.com and search for crock pot. I always find awesome recipes there and there are reviews too!

OK - I am thinking hungry, man food since he will be working all day. What about steaks on the grill and baked potato wedges? Here is my recipe for baked potato wedges http://thehighlandviewpantry.blogspot.com/2010/06/baked-potato-wedges.html. Add some vegetables for color. This broccoli and red pepper flakes is nice http://thehighlandviewpantry.blogspot.com/2011/01/broccoli-with-red-pepper-flakes.html. One of the first times I cooked for my husband when we were dating I tried to get really fancy. So I made lemon salmon. The poor man couldn't swallow it - but bless him he tried to eat it. So I went simple and now he loves my food. The other night the kids and I tried sushi but by now I knew enough about him to roast him a chicken.

Hey Lori,

French Dip sandwiches would be perfect. Guys (and girls) love them. Here is the recipe:


French Dip


3 lb. Beef roast
½ cup soy sauce
1 cube beef bouillon
1 bay leaf
3 whole peppercorns
1 teaspoon dried rosemary, crushed
1 teaspoon dried thyme
1 teaspoon garlic powder
French bread or rolls

Remove and discard all visible fat from roast. Place trimmed roast in a slow cooker.
In a medium bowl combine soy sauce, bouillon, bay leaf, peppercorns, rosemary, thyme, and garlic powder. Mix well and pour mixture over roast. Add water to almost cover roast. Cover slow cooker and cook on low heat for 10-12 hours or until meat is very tender.
Remove meat from broth; reserving broth. Shred meat with a fork and distribute on bread for sandwiches. Use reserved broth for dipping.

Try placing slices of Provolone cheese on top of meat on sandwiches and broil until melted. Then top with bread. And serve with a tossed salad and pepperoncinis.

A cobbler would be great for dessert :)
