Farmgirls,
I am trying to clean out my freezer and I've found several packages of blanched summer (yellow) squash. I love it stewed with a bit of onion and butter, but my husband refuses to eat it that way. He also doesn't care for squash casserole - with the cream of mushroom soup, sour cream, breadcrumbs, etc. and I can't (and don't need to) eat the whole thing by myself.
I am extremely sensitive to corn, so squash dressing with a cornbread/cornmeal base won't work for me. So, what do I do with it? I don't want to throw it away, but it needs to be moved to make room for new things. I've got it in 2 C. packages, if that helps. Any recipes you can pass along will be greatly appreciated. I have a great squash pickle recipe I'd be willing to share if anyone is interested...

My great granny used to make a casserole with summer squash layering in a buttered casserole...
summer squash, ground beef with diced onion(browned and drained), corn, and then kept layering it up and grated cheese on top then baked until warmed thru.

I too was wondering what to do with my blanched squash. I will try that TexMex casserole. Thanks, Holly for bringing this up. Thanks, Sarah, for sharing the recipe.
