Kristina, here is my recipe. Have used it several years.

Canned Apple Pie Filling

2 gal bucket full of apples
Pealed, cored and sliced

10 cups water
5 cups sugar
1 cup cornstarch
5 teaspoons cinnamon
2 Tablespoons lemon juice

Fill quart jars (7) with apples
Combine syrup ingredients and bring to a boil.
Pour syrup over apples to the top of jar.
Seal and process for 20 minutes in boiling water bath.

How wild you should ask. I'm teaching a canning class tonight on waterbath canning and am teaching how to can apple pie filling! :-) I teach these classes for free in hopes to encourage women to get back into the basics of cooking. We'll be having apple crisp made from the cannned pie filling tonight. Each woman will go home with a quart of apple pie filling. I have 10 women coming which is just the right amount. Thanks! I used Belle's recipe and made 2 pies for dinner with the leftover syrup. I still have more apples too Thanks a bunch.

Please remember that the USDA does NOT recommend you can anything with cornstarch in it.

That must be something new because my recipe came from an extension recipe and I doctored it up. I have been making canned apple pie filling for probably 10 years or so and have had no problems.

I too, have used my recipe for pie filling with corn starch for several years. I have used the pie filling that had been canned for up to 2 years with no problem. Gosh, now you have me wondering. Have a bunch of it canned.

Belle, I have decided not to let the government save me from myself anymore. :-) When I found out yesterday that they are considering regulating NUTMEG (one of the main ingredients in my pie filling!!) because dumb teenagers are buying it and snorting it, I decided that I've had enough of telling me what is best for me!!!!!!!

Because of the thickness of the cornstarch you can't be guaranteed the product will reach the correct tempature for the correct amount of time and thus bacteria can grow. You can make your own choices and do as you please, just do remember when you are using "someone's own recipe" it has not been tested for the correct acidity or processing times and you are taking your life or someone elses life into your hands. I have ran across alot of recipes that sound great to can, but when looking at the recipe I have learned that you can't actually can it because of the amount of certian items. Salsa is a big one on that list. I am not the food police, but some people when starting with canning don't realize there are some rules and not every recipe you find is to be canned.

Well, I don't know what to say about it, except if people have used it for years and it works, why not use it? Also, sometimes I wonder if they are simply trying to promote the sale of another ingredient. Personally, I'm tired of the government, and research natural ingredients on my own. What else would you use anyway? Why not sift the cornstarch before adding it?
