OK, I am on a pumpkin roll tonight LOL. These are my all time favorite breakfast treats, but I always wait until the autumn coolness settles in to make them. For some reason, it doesn't seem right to make them when it's warm out....I also use much more spice and use cinnamon, cloves, nutmeg, allspice, those sorts of things, rather than a bought blend. But that's how I like my pumpkin pie, too - never saw a recipe that uses as much spice as I use, but everyone seems to love my pie!
1 cup flour 1 1/2 tsp baking powder 1/2 tsp salt 1/4 tsp pumpkin pie spice 2 eggs 2 TBSP brown sugar 1 cup half and half 4 TBSP butter, melted, cooled 1/2 cup canned pumpkin puree 1/2 cup Granny Smith apple, pared, cored, and finely diced 1/3 cup chopped pecans
Mix flour, baking powder, salt, and pie spice in small bowl. Whisk eggs and brown sugar together in another bowl. Add half and half and butter and whisk until blended. Add dry ingredients to egg mixture and stir just until blended. Stir in pumpkin, then fold in apple and walnuts. Heat waffle iron as directed by manufacturer and make waffles, using generous 3/4 cup batter for large iron. Serve waffles hot with butter and warmed maple syrup. Makes 16.

Oh my gosh, Catherine! I use more spice in all of my pumpkin recipes, too! AND since store bought is never spicy enough - I, too, make my own pumpkin pie spice! LOL! Thanks so much! My family is going to go CRAZY for these! Hugs, Nini
