OK, as requested by Nini, here is my pumpkin stew recipe. I love it and hope others will, too! It is from a very old magazine, a McCall's Cooking School v.13.

1 lb pork shoulder
1 1/2 tsp salt
3/4 tsp pepper
1/2 tsp 5-spice powder
1 sugar pumpkin (about 5 lb), washed
boiling water
1 TBSP unsifted flour
2 TBSP salad oil
1/4 tsp red pepper flakes
1 TBSP dark sesame oil
1 can (8.5 oz) cream-style corn
1 medium Bosc pear
1 medium red pepper
1 medium green pepper
5 medium green onions, cut into 1 1/2 inch long pieces

Cut the pork shoulder into 1 inch cubes. In medium skillet, over high heat, cook salt, peeper and spice powder, shaking pan constantly, 2 minutes. In medium bowl, toss spice mixture with pork cubes; leave at room temperature, covered, 30 minutes or up to 2 hours.

Preheat oven to 400 degrees F. Cut off a circle 2 1/2 inches from stem end of pumpkin to form a lid. Remove seeds (save and bake to snack on!) and fibers from cavity. Invert pumpkin, and set on 1 inch high rack, set in baking pan with lid. Add boiling water to level of rack.

Tightly cover pumpkin and pan with foil. Bake about 40 minutes, or until flesh is tender enough to pierce with a fork. While pumpkin is baking, toss pork cubes with flour. In same skillet used for spice mixture, heat salad oil over medium-high heat, and brown pork cubes.

Add pepper flakes, sesame oil, corn and 1/4 cup water. Core and pare pear; cut into 1/2 inch cubes; add to stew. Reduce heat, and simmer, covered, 30 minutes. Remove pumpkin from oven. With melon baller, scoop out about 2 cups pumpkin pieces; set aside.

Remove stems, ribs and seeds from peppers. Cut peppers into 1/2 inch squares. Add to stew with green onions; cook 10 minutes. Add pumpkin pieces to stew. Spoon stew into pumpkin; cover with pumpkin lid. Serve stew from pumpkin, over rice, if desired.

Serves 4.

We just picked up a "Cinderella" pumpkin at our last soap show from the vendor next to us. My DH is the "cook" in the family and he is going to LOVE making this!
