SO yesterday I decided I needed to process some of my tomatoes. I did what the book suggested and got the skins and most of the cores out (I want one of those little circle scooper things that I used to use at a restaurant!) Then I cooked it down and ran it through the food mill.
I seasoned it with salt and that is it but WOW! it is SOOO good! I really like the way V-8 tastes and it tastes a lot like that but only better. Is about the consistency of a nice thick tomato soup and if I let it cook down a little more it can be tomato sauce for an excellent spaghetti. Now I am just wishing I had another couple bushels of tomatoes!
Sue- sorry! I can't help it! It's so yummy. Yesterday I was contemplating instead of canning it, making a really rich vegetable soup. It would be so healthy for us! Yum. The problem is that I have so much I want to do with it- and not enough tomatoes! I might end up going to the farmer's market next weekend and buy some some tomatoes just so I can can!
