Well we did it again, planted a lot of tomatoes and they are doing themselves proud. I've already canned a good year's supply of Pasta Sauces, Pizza Sauce, homemade catsup, and tomato sauce. I'm working my way into tomato juice, not fond of tomato preserves, and them I remembered sweetened tomato sauce. My gramdma canned sweetened chunks of tomatoes in juice and it was my Dad's favorite treat, eaten like a fruit sauce, usually with a piece of bread slathered with peanut butter, "no don't fold it into a sandwich". I don't know if someone else is familiar with it or if it was Grandma's invention to save up fruit that she could grow herself I haven't found a recipe anywhere. I suppose I could just experiment but wondered if anyone else has a sugar to tomato ratio in mind? Any other tomato ideas are welcome too. By the way. how about cucumber ideas too? I've got the dill and sweet pickles and am thinking about various relish combinations. Susan

I am soo jealous. My tomatoes didn't do well enough to can any. Do you like salsa? That was one thing I was going to do if my crop came out better.
My cucumbers did very well so we have made dill spears,chips and stackers. Bread and butter pickles and sweet relish.

I'm in the process of making some spaghetti sauce to can as I type (cooking down on the stove). I'm going to try a zucchini-tomato salsa recipe that sounds good, next - very popular off recipezaar! Anyway I can sneak some zucchini into a dish, I do it!!

I've got tomatoes coming out of my ears this year! I can't believe I haven't made fried green tomatoes this year yet, it is a favorite. I made an easy pizza tonight that was out of this world with sliced tomatoes and fresh basil drizzled in olive oil. Been making a garbanzo bean/fresh tomato salad alot lately too. It's got mint and basil and feta cheese. Both were easy. Let me know if you'd like the recipe. I could email it. I just said tonight, though, I am running out of ideas!

Thanks for the ideas! Nicole, It maybe that I didn't really know what I was doing with them but when I tried fried green tomatoes it was a one time thing around here, not even a "maybe if I tried it a little differently". I'd appreciate those recipes. I've got a really good yeast pizza dough that should be great with that pizza and the salad sounds fascinating too. I'm trying to work in more meatless meals so that's a good option. Susan

I pickled some of my green tomatoes. The small ones I left whole and the larger ones I 1/2 or 1/4 them. I did them kosher and dill. Delicious! Years ago I canned a combination of tomatoes, zuchinni,onions and garlic. We ate it over pasta. I will be canning som this week. I can it like I do tomatoes. You can freeze it also.

Darlene, Tomato pickles sound interesting, it might be a good thing to try expecially at the end of the season. I like chunky pasta sauces so that's another interesting option. Hmmm. I just may have to invest in more canning jars!

barely enough tomatoes to snack on out of the garden. So disappointed. Finally went and bought 4 boxes of romas today. The salsa is sitting in the fridge waiting to be bottled tomorrow. Daughter asked if I could throw some peaches and mango in a few jars... so I am going to add some in tomorrow. Should can up about 40 pints of salsa. THe other 3 boxes are still in various stages of green so I can spread out the canning over the week. =)
