Hi farmgirls. I'm looking for a few good bean recipes. I know eating beans and rice is cheaper, I just don't have a whole lot of recipes that use them that sound decent. It seems like almost everything is Mexican...and although that's good, it would be nice to find something that uses beans and or rice that is not Mexican. Any ideas? (You can still post a Mexi type dish here if that's all you have!)

Mmmm, hoppin' john is good. I make it every New Year's for good luck but it's good the rest of the time too. I have a couple bean casseroles too - I can mail them to you Amy. Do you want to use dried beans or canned? Amy Grace

Sorry the would love it was to Ms Lilly because gracies post hadn't come up first time I checked! I would also love your recipes, gracie...Dried beans, please. :)

Gourmet White Chili
1 lb great northern white beans 1 Tbsp olive oil 2 med size onions, chopped 4 cloves garlic, minced 8 oz can green chilies 2 tsp cumin 2 tsp dried oregano 1/4 tsp ground cloves 1/4 tsp cayenne pepper 2 lbs boneless, skinless, uncooked chicken breast, cubed 6 cups chicken broth 1 tsp salt 1/2 tsp black pepper
Garnishes: cheese sour cream cilantro
Cover beans with water and soak overnight. Drain, discarding soaking water.
Cook cubed chicken in olive oil until done.
Place all ingredient into a crock pot and cook until done. About 8-10 hours on low or 4-6 on high.
Serve in bowls topped with your chohice of garnishes.

I would love to see more recipes posted. The beans are a good cheap substitute for meat..almost a complete protein. Even if you have lentil recipes..that would be good. I know that some of the 7th Day Adventists have some recipes, & I'm trying to get those.

bean salad!!!!!!!!
I like to use dark red kidney beans, garbanzo beans, green and yellow beans, and some onion marinated with apple cider vinegar, water, and sugar! YUMMY!
Beans are also a cheap protein to add to garden type salads. Use chilled beans, with eggs, as your main proteins to your chef salad, and then use the more expensive proteins like chicken, and cheese more sparingly on your chef salad and it's yummy!
There's also a Amish bean salad I've been meaning to try that calls for mayo! Maybe do a search for Amish bean salad and you will find what I am talking about.
red beans are also a must in vegetable soups around here. especially italian vegetable soups, a little pasta, red beans, tomatoes, veggies, etc yummy!
then there is the old stand by-ham hocks and lima/butter beans, with corn bread! YUMMY! Serve the corn bread with honey or molasses, and a tall glass of cold milk and you're talking comfort food!
My great grandmother used to serve navy beans a lot, but now I can't remember how. ;(
I believe there is a lot of italian bean salads-using a marinade of like italian type dressing, with navy/white beans out there too.

oh you said with Rice, look for cajun recipes, there is a ton of rice and bean cajun recipes. We like dirty rice and red beans a lot!
Also sometimes I just use soul food seasoning, onion and garlic with rice, and add red beans.
