Since we are **really** watching our food budget now, I'm looking for some ideas for tasty recipes for suppertime that are appropriate for summertime. We eat a lot of one dish casseroles and soups when its cold outside. But now when the weather is warming up...any creative suggestions? My food budget is $50-75 a week.

Tuna fish salad in a cut tomato that opens up like a flower so to speak.
Grilled veggies from the garden and grilled meat of your choice
Tacos with your lettuce and tomatoes
Milkshakes when ice cream is on sale
Chef salad with eggs as the protien
Cottage cheese and pears
As you can see our suppers are very light. We usually eat a full balanced meal for breakfast and lunch and then something much lighter for supper.

I am not sure if these are "cheap" but here are some of our favorites

BLTs and potato salad
Teriyaki Chicken Wings and Fried Rice
Grilled Chicken Breasts with Creamy corn(3 ears Fresh corn grilled and sliced off cobs, add 1/3c. sour cream, salt, pepper add milk to thin if necessary)
Chef Salads - either with chicken strips or slices of ham and hardboiled eggs and homemade ranch or italian dressing
Pork Chops, Grilled Pineapple, and Vinegar Slaw
Pasta with fresh tomatoes and other garden veggies
Egg Salad sandwiches with bacon
Breakfast for dinner (eggs and bacon, biscuits and gravy, pancakes, frenchtoast etc) is always a favorite

We usually make homemade juice with our juicer for breakfast along with yogurt and homemade granola. We eat dinner fairly early during the summer and then snack on fruit, veggies,cheese and crackers, homemade tortilla chips and himemade salsa or homemade ice cream or frozen yogurt which we always have in the freezer later in the evening. We are both teachers so we are home a lot in the summer time.

Do you have a garden? With lettuce and anything else that's ready?
We have used up almost all our lettuce by eating salads every day. As a side dish, they really add to a menu and so you need less of the main dish. I've added radishes, scallions and sugar snap peas from my garden.
The lettuce has also made many main dish meals. Taco salad, chef's salad, a couple chicken breasts sauteed in olive oil and garlic, sliced then put in the salad, or a small steak(or even just leftover steak), grilled then sliced in a salad with sliced onion.
By the end of July we will be eating lots more from the garden, that will help too!

Egg salad sandwiches (I know you have eggs:))
Did you plant zucchini? I have some awesome, cheap zucchini recipes.
Stuffed chard is good, or vietnamese style lettuce rolls would use some of your lettuce, those are "fun food" too.
We are always on a tight budget but particularly this summer, fortunately I have lots in the freezer and my 17 1/2 year old son is working at the church camp my dad runs so he is away with free food all summer.

Yes we planted zucchini and I think we might actually get some this year! Our lettuce did not survive though so we don't have any of that except what we get from friends. :) and yes...we have EGGS!!! :)

Here is one of my summer favorites. I don't add spinach and I use olives and italian dressing instead of greek. I am sure you can tweak it to your liking!

boned chicken breasts sauted in olive oil, then add strips of sweet bannana peppers on top, and top that with provalone cheese til melted, great as it is or in a sandwich

try zuchinni frittattas! YUM!

I also like to saute zuch-the more then better, and any other veggies I have, cook some noodles (any kind, but I like the no yolks type the best for this recipe) in chicken broth, and use some form of ground meat-I prefer turkey. Mix all together, yummy!

You can also make a lasagna using zuch as the noodles. I know noodles are cheap, but usually zuch is so crazy you have it coming out of your ears and is completely free! So just again saute up the zuch and layer it in lasagna but don't use noodles, just the zuch as the noodles, then use your regular recipe for the rest of the lasagna!

oh and i season every thing with onions and garlic, so when I give a recipe like above, remember I have added garlic and onions as a given to all my food!
