I was trying to copy a salad I love from a local deli. I ended up making my own concoction. I really should write down quantities. This was a big hit with my family. I'm trying to find new healthy salads/side dishes for the summer.
About 1-1/2 cups cold barley 1 cup or so garbanzo beans 1 cup or so cannellini beans (or great white) Chopped green onions - I used about 3. Chopped roasted red peppers - I used almost a whole pepper. small can Mexican corn fresh garlic - I like a lot of garlic. fresh basil. olive oil red wine vinegar salt & pepper
If you make a large quantity - use the whole can of garbanzo beans & cannellini beans (or if you use dried, adjust accordingly). I only used enough olive oil & vinegar to give it flavor, not so it's swimming in it.
I've made it twice now. The first time without the cannellini beans in it. Second time with it. My girls prefer it without the beans.
You could probably even sub fresh cut corn when it's in season. That would be so good!
