It is a cucumber spread... it is so good and refreshing! You can make sandwiches out of it or spread it on veggies or crackers. I have cucumbers in my garden and want to use them for it.

They are all really good. We ate so much "spread" the weekend of the derby, I think I'm good for another year until Derby again!

The benedictine, Olive Nut and the Pimento cheese make bunches--truly!

I'm so glad that you liked the Benedictine recipe, Cecily. That recipe is from the the Brown Hotel (Louisville) circa 1924. So, it's pretty original :)

Melanie--you should give some of these a try. They make loads and seem to keep for a good amount of time--a little bit of the Bluegrass in the land of Anne ;)
