This recipe is taken from Company's Coming, Squares cookbook.

Nanaimo Bars

Bottom Layer:

1/2 cup butter
1/4 cup sugar
5 Tbsp cocoa
1 egg, beaten
1 3/4 cups graham wafer crumbs
1 cup fine coconut
1/2 cup finely chopped walnuts

Melt first three ingredients in top of double boiler or in heavy saucepan. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut and nuts. Press firmly into ungreased 9x9 inch pan

Second Layer:

1/2 cup butter
3 Tbsp milk
2 Tbsp vanilla custard powder
2 cups icing sugar (confectioners sugar)

Cream butter, milk, custard powder and icing sugar together well. Beat until light. Spread over bottom layer

Third Layer:

2/3 cup semi-sweet chocolate chips or 4 squares chocolate (1 oz each)
2 Tbsp butter

Melt chips and butter over low heat. Cool. When cool but still runny, spread over second layer. Chill in refridgerator. Use a sharp knife to cut. 36 squares.
It freezes well.

If you live in the U.S. you might have a hard time finding vanilla custard powder? Let me know. It should be in the baking section of your grocery store, with the puddings etc.

Thanks Margret! However here in "Nowhere, USA" I won't be able to find the vanilla custard powder...Is it like a pudding? Could I substitute vanilla pudding or a custard pudding?

I have no idea. That's helpful, isn't it. You could try it. Since you haven't had them before, you won't know the difference.
Check your store before you go ahead with the pudding, though. Do you have a bulk food store around? They may have it too.

I checked the Three Layered Yummie Recipe I have which is exactly the same as the Nanaimo Bars and you can use instant vanilla pudding in place of the vanilla custard powder.

Margret-- Thanks for the recipe! I made these last night for the band concert tonight and there is a serious chance they won't last that long with my guys! They are delicious! I thought the Nanaimo was a an unusual name and happened to be flipping throught he October issue of Body & Soul and there was a boat with Nanaimo,BC as it's provenance!
Learn something new every day! Now I know they are from a region!

Glad you like them, bramble. Did you use vanilla custard powder or vanilla pudding powder? Just wondering.

Margret-- I used egg custard mix that comes boxed like pudding. It's harder to find than it used to be but some of our markets still have it. They were a big hit and I am making a second batch for our cousins party tomorrow, thanks again. Happy Holidays!

Margret, I just had to tell you a story about the nanaimo bars... My husband has spent a lot of time on layovers in Toronto and I mentioned your recipe for the bars and his ears really perked up. He said the guys actually fight over those bars and they love being in Canada to eat the nanaimo bars! I am going to make them for our New Years party with friends. Hope there are a few to serve because my husband will be right there while I prepare them to snarf them down. Hope your Christmas was wonderful! Jenny from Kansas

I was so shocked when I saw this topic!!! Whenever I mention Nanaimo Bars I get the strangest looks. These have got to be the best dessert bars EVER!!!! My dad worked with a man originally from Toronto and that's how we got the recipe. For the filling, I just use regular vanilla pudding (the kind you cook). That came directly from this man that worked with my dad. I tell you when I make these things, everyone wants the recipe!!
