Pork Chops With Blackberry-Thyme Sauce
Recipe By :

2 teaspoons vegetable oil
1 1/4 pork chops, R-T-C -- boneless
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1 large shallot -- finely chopped
2 tablespoons brown sugar
1 cup blackberries -- divided,
1/2 cup mashed with a fork
3/4 cup reduced sodium beef broth
1/2 tablespoon fresh chopped thyme or 1/2 tsp. dried
1 teaspoon Dijon mustard
2 tablespoons chopped parsley
Heat oven to warm. In large skillet heat oil over medium heat. Sprinkle pork chops with salt and pepper.

Cook chops until browned and cooked through, 8-10 minutes, turning once (do not overcook).
Transfer to serving plate and place in oven.
Melt butter in skillet. Add shallot and cook 2 minutes, stirring, until softened.
Stir in sugar and mashed blackberries; cook 2 minutes.
Stir in broth and thyme. Increase heat to medium-high and cook about 4 minutes, until sauce thickens to the consistency of maple syrup.
Remove pork from oven and pour accumulated juices into sauce. Stir in mustard; cook 30 seconds.
Pour sauce over pork chops. Garnish with remaining berries and chopped parsley.

Stir in sugar and mashed blackberries; cook 2 minutes.
