Feta Veggie Salad (From Quick Cooking May/June 2005)
2 c sliced fresh mushrooms 1 large green pepper, coarsely chopped 1 medium cucumber, seeded and chopped 1 large tomato, seeded and chopped 1 small red onion, coarsely chopped 1 cup crumbled tomato basil feta cheese (4 ounces) 1 teaspoon minced garlic 2/3 cup greek vinaigrette (I used Kens Steakhouse Greek Dressing)
Beef with Peppers
1 pound beef sirloin steak, sliced thin 1/4 teaspoon minced garlic 2 tablespoons oil 3 large green peppers, coared and sliced thin 1 cup hoisin sauce
stirfry beef, peppers and garlic in wok or large skillet until meat is fully cooked (no pink showing) and until the peppers are just starting to get limp. Add the hoisin sauce to the skillet and bring to a boil, the sauce will thicken. Serve with egg noodles. Ramen noodles would be good with this too. |

This looks yummy! We processed a bull last fall and still have a lot of meat to use. I am always in search of good beef recipes. Thanks Kathy!

Here is another of our favorite no fail beef recipes. It's in all the crock pot books so I am sure you already know it but here goes anyway.
2 lb beef roast (you know the cheaper cut the better, bone in or out, doesn't matter either) 1 10.5 ounce can of cream of mushroon soup 1 envelop dry onion soup mix
Put beef in crock pot, sprinkle dry soup mix over the roast then add the can of soup.
When you get home you will have the most delicious dinner waiting. We usually have it with fresh green beans and noodles. Homemade rolls are good too, to soak up the gravy.

Kathy my mouth is watering! I have done pot roasts this way! I put potatoes and carrots and onions right in with the meat. Thanks!

Here's a good one, 2lb roast, 1 jar of pepperocini's, 1 packet of Good Seasons Zesty Itailian dressing and 1 packet of Au Jus mix. The original recipe calls for 1/2 cup of water and 1/2 the liquid from the pepper, but I use all the pepper juice.Put it in the crock pot before you leave for work and ta da! Spicey Italian Beefs!
