I went ahead these two past days and made some with the recipe from Prairieland Herbs.(http://www.prairielandherbs.com/violetjelly.htm)

I made 16 jars of 6 oz!

My goodness that looks great. I am so inspired. I went out to look at my violets and there are 4, Yep that's it so far.

I was amazed how the color changed after adding the lemon.

There are violet candies that you can buy and they are delish!! Also you can dip violets in water after thorough rinsing and dip them in sugar. Then pop them in the freezer for about an hour. You now have a great cold treat. Just bite the petals off and enoy! It actually tastes similar to the jelly I've been told. My girls love frozen violets and I'm gonna try the jelly this year.

Those are beautiful. You are also great at staging your photos. Wow. I hope that I can find some violets soon to make the jelly with. Did those come from your yard?

How ABSOLUTELY BEAUTIFUL, Karrieann!!!! We will get off early from work today, and after some errands, I'm headed home to pick some violets to let steep over night and jelly tomorrow!! I also have the Prairieland Herbs recipe :)

It just looks so lovely and really revs my engines for Springtime...

I chose the hottest day of the year so far to go out and pick violets. I'm assuming you pull the petals off, right? I tend to overthink recipes.

I have read that the best time is in the morning after the dew has dried up.
I went out in the evening as the sun was going down and picked them... about 5pm. I picked for one hour and a half. It was pleasant! I picked the whole entire blossom heads, no stems.

Take a peek in my blog, I posted pictures for the step by step process.

Robin.. let me think about that! I have never sold jelly before! It is a very good possibility though!

Well, mine should have very concentrated flavor - I just sat here and pulled off all the petals. Any tips on straining the lemon juice? Cheesecloth?

... I was lazy and just used what lemon juice I had straight up. key west lemon juice and it wasn't clear at all... but through the process, it cleared on its own I guess.

Thanks so much for the recipe and the idea. I don't have enough violets but plenty of dandelions, so I have some beautiful amber colored jelly from them. And it is delicious! I picked between rain showers last night, let it steep over night and made jelly today. I hope I can find enough violets to make a batch of that beautiful lilac colored jelly. Jellies always look like jewels sitting on the shelf. Love it!

How lovely!!
My first herbal project was making violet syrup when I was 12. I think I got the recipe from World MAgazine..
We don't have violets here in TX, but we sure did growing up in New England!!
Looks like you had a lot of fun with this!

My yard id FULL of violets right now. I am going to pick some tonight. But I don't have liquid pectin. Can I use the powdered kind instead?

what does the jelly taste like? I saw some violets at the side of the road can I use those or should i only do ones that I know have not been sprayed with anything?

well.. it taste sweet, sweet like watermelon and it has that soft flavor of the key west's lemon juice that I used. It is delicate flavor. Perfect for tea time, I think!

delicia.. if you KNOW for sure that it has been sprayed, maybe.. but also there's the fumes. I wouldn't, personally.
