I have wanted to try the Pioneer Woman's Pot Roast and potatoes and Pineapple upside down cake for awhile. So today I am making it all. It already smells so good.

What's for dinner at your house today?

Mushroom swiss steak (cooked in the crockpot yesterday), mash taters, corn (frozen from last year). Yum! Since I cooked the steak yesterday, the rest of the dinner will be easy to fix and mom gets to quilt today!!

Well, my husband is heading out on a fishing trip, so it is just my son and I so we are having french toast and sausage. That doesn't sound like much of a Sunday dinner but we are fans of breakfast for dinner and DH is not so it is a treat. Plus it will use some eggs, granted not many, but some (we have 7 dozen eggs in the fridge, with more on the way today, tomorrow, the next day.....)
Kristin - please share how the Pot Roast turns out, I just ordered her cookbook

I am getting hungry seeing what everyone's having. I also do breakfast for dinner. It's so easy and good. Amy Grace, I hope you hubby catches lots of fish. What kind is he fishing for?

Tina, I would love your recipe for the mushroom swiss steak. Do you use cube steak? We had a steer butchered and have lots of that and different cuts of steaks. Plus about 150 pounds of burger.

The house smells too good. My daughter is oicking my hubby up about 2 this afternoon. He's only going to be here long enough to eat and work on my cantankerous tiller for me. Then off to Atlanta. But I'll have him a nice plate of real food plus some spaghetti I made the other day for him to take with him.

My hens are laying really good now. I have 6 dozen a week already sold. So I get scared when I run low. I love these eggs!

Kristin - he is trout fishing, he is a fly-fisherman so does catch-and-release only. Oddly, for such a big fishing fan he does not like to eat fish, so it works out. I am going to probably sell 2-3 dozen eggs per week to co-workers, should cover the cost of feed.
Other than that I just search for egg recipes:)

Well the midday meal was not so fancy (or healthy either). We had a whopper, jr. and split an order of fries. Now for supper we are going to have something much better. Hubby said he'd like a nice spinach salad and I'm thinking some creamy tomato soup sounds nice with some sort of meat. Probably roasted chicken.

I would love to go fly fishing. It looks so peaceful. And the rivers are just beautiful. And I love trout too. I hope he has a great time and brings you home some fish at least.

I just checked on the cake. It's still jiggly in the middle but the top's brown. So I put some tin foil on the top and will cook it a little longer. It calls for a 12" cast iron pan. I thought that's what mine was. It's already spilled over onto the bottom of the oven. I hate when that happens. I always forget and next time I use the oven I get a house full of smoke.

Lainey, that sounds like a good supper. I love spinach salads. I hope to be having some soon. My spinach is taking it's sweet time though. Do you make your own soup?

Everyone's meals sound great. We are just having Chili, Homemade Cornbread with Pear & Cranberry Crisp for dessert :) I know it seems like a heavier meal, but we need to use up what's in the freezer :)

Ya'll have got to try that pot roast. It is too good. And I used my own grass fed beef. And the cake was yummy! And so pretty on the cake plate. I hated to cut it. It took over an hour to finally get it done all the way through. It called for only 30-40 minutes. But it was good and pretty.

Sounds like everyone's eating good today!

Going a little lighter today since we had Mexican out yesterday. Baked fish, rice and broccoli. And of course, DH CANNOT eat without some type of bread!! LOL!!

Poor me, guess I'm going to have to sacrifice and get Pioneer Woman's cookbook. (NOT!!) LOL!!

Today we were blessed to have our Palm Sunday family dinner. Since our son and wife will be out of town next week, we had it today because the son and daughterinlaw are borrowing the motorhome to go to Michigan for Easter. We had ham, potato salad, green beans, home made yeast rolls with apple butter and coconut cake for desert. All yummy indeed. After dinner the men folk went outside to prep the motorhome for the upcoming trip and the grandaughters, daughterinlaw and I raided the fabric and ribbon boxes and mad super girl capes of gold, red and black and braided crowns with spangles. All beautiful indeed. My sweet girls were gorgeous super heros. After a bit the fourteen year old grandson got bored with the motorhome stuff and attacked his younger sisters with a barage of pine cones. The girls of course were ready for an attack with their garbage can lid shields and so were kept fairly safe from the onslaught. What fun and the giggles are still ringing in my heart. Then we all came in for homemade hot cocoa. A full day of family love. Thank you God for these blessings.

Oh Teresa! Ya just can't beat a fried chicken dinner. Yummmm. I want to do that next time everyone's here again.

Candy, I have a hubby just like that. Has to have a piece of bread in his hand or he can't eat. Silly men. Your dinner sounds good and very healthy!

Hubby got a leg of lamb yesterday for a great price, so I talked him into cooking it on the grill. He does it perfectly if a bit slow, lol! It wasn't ready until about 8:00 last night so I just had a little bit...
Today though I wrapped it in foil and heated it in a warm oven, and cooked cheesy potaoes from scratch plus fresh asparagus, yum!
Everyone else's meals sound so good too! I'm going to have to check out the Pioneer Woman's cookbook!

Brenda, I think leg of lamb is my favorite. I have one in the freezer and I keep thinking I'll cook it so I think I'll do it in April. A frien of mine makes a really good one. It's so tender and even good several days later.

i am with teresa. papa has been in wyoming for a weeks worth of work. so 10 days out. kris knows very well how great it is when they come home. for us it will be tomorrow. fried chicken we grew. mashed taters..gravy... non gmo corn... bisquits ..ice cream from buttercups milk yum and a hubby is home too yipee...sherrye

Sherrye, I'm so glad your hubby's home too. So is mine for a few days. It's wierd that he's here on a Monday. He'll have to leave probably Wed. I like when he's here. I get to cook. I am going to make meatloaf, twice baked potatoes and steamed broc. Your Monday dinner sounds yummy, too, Sherrye. Enjoy your hubby. When does he have to leave again?

Kristen, that soup was from a jar but had fresh ingredients. I didn't eat it though. My husband ended up having a tuna steak with the spinach salad and I had homemade nachos. I couldn't eat too much of it but they were good!

How was the potroast, Kris? I cleaned all day and ran some much needed errands so there was very little thought given to Sunday dinner (and with a dh who snacked all day and is the size of a beanpole, I knew better than to "commit" to anything huge)...so I sortof winged and would you believe he asked me to make the same thing again tonight? I'm not going to, but....

We made a simplified version of the Pioneer Woman's countryfried steak: I just seasoned the cubesteaks really well with a good seasoned salt, then floured them and cooked them in butter. Steamed asparagus with fresh squeezed lemon, kosher salt and cracked pepper and mashed sweet potatoes (with butter, cinnamon and a little brown sugar).

Jonni, it was so good. The meat was so tender. Everyone liked it. My daughter took some home with her. Your dinner sounds good. I love country froied steak with lots of gravy and mashed potatoes. But ya can't go wrong with sweet potatoes with all the good stuff on them. Yum.

Lainey, any kind of soup is good.
