I don't know for sure, but I wonder if you could use "regular" scallion recipes, and just substitute the garlic variety? - I'll bet they'd be wonderful stir-fried, in a salad, topping any sort of casserole, wrapped and tied around a bunch of steamed asparagus......

Excuse my ignorance but is green garlic the same as regular garlic bulbs or is there no bulb? Ok, that sounds stupid even to me.

Green Garlic is garlic pulled up early before it starts to bulb. Green garlic usually is one of the first things that show upat the farmers market along with green onions. After the green garlic then there is a month or so of garlic scapes (the flower stalk to the garlic ). Finally the garlic is harvested (here in NC it is june) other place farther north it is July and August.
I did get a couple more green garlic recipes before I went to market so I had a full sheet of recipes to give customers. I sold all i took and could of sold alot more... didn't pull enough .
