I am so excited, one of our dear sistas sent me some of her starter and I fed her all week, and this morning I made 2 loaves. I tried to do the "rustic" version, they didnt rise as much as I expected, but they taste so amazing! The inside is actually "spongie", my previous attempts have produced rocks!
My mother isnt bubbly now. Should I add smaller amounts of flour? Should I stir her more? She is covered with a damp towel and a loose lid....should I move her to a different part of the kitchen?

I usually feed mine 1/4 to 1/2 cup of flour and the same or little less with water. Make sure you flour is unbleached and your water filtered and NOT cold room temp is good. I keep mine in a plastic pitcher with alid so she can get a little air. When I started I tried using the wet towel and a bowl and plate I got so much mold it wasn't funny. I must have a moist house.

I seem to kill off my starter too. I haven't quite figured out the right way to keep/feed it.
