I subscribe to Hobby Farm Home magazine and the latest issue included some dessert recipes baked in cast iron skillets. One was "Mammoth Chocolate Chip Cookie!" I wanted to try it because we REALLY like the way cornbread comes out when baked in the cast iron skillet but I didn't necessarily want a mammoth cookie!

I took my favorite chocolate chip oatmeal bar cookie recipe that I usually bake in an 8 x 8-inch square pan and baked it in the 10-inch cast iron skillet. The bottom came out crunchier, just as I was hoping, and the middle is chewy, just the way hubby likes his cookies! I highly recommend giving it a try!

Sorry the picture is so big, I just can't seem to figure out how to make it smaller!

Hmmm...the picture was HUGE when I posted, now it is the size I wanted! I'm SOOOO confused!

Choc-Oat-Chip Cookie

1/2 cup butter, softened
1/2 cup plus 2 tablespoons firmly packed brown sugar
1/4 cup granulated sugar
1 egg
1 tablespoon milk
1 teaspoon vanilla
3/4 cup plus 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1-1/4 cups quick or old-fashioned oats
1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped nuts

Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs, milk and vanilla; beat well. Add combined flour, baking soda and salt; mix well. Stir in oats, chocolate chips and nuts; mix well. Spread batter in lightly greased 10-inch cast iron skillet. Bake for 25 to 30 minutes until golden brown. Cool completely before slicing.

Yu-um. DH would love this recipe! I have a small cast iron skillet - maybe 6"? I could make smaller cookies...
