I have made this before, and know I need vodka and vanilla beans, but cannot remember the quantities, can anyone help me?

Brenda, when I started mine I used a quart of vodka and about 8 beans. You need to cut them all the way down one side, too. Let it sit in a dark place about a month os so before using. I just add more vodka when needed. I have only added fresh beans once since I made mine about 3 years ago. I probably need to get some fresh ones soon.

I'm going to try this, I just used the last of my vanilla extract, it was so expensive, I am not buying the "real stuff" again, imitation is fine even though it doesn't taste as good. I think a large batch would be better and if you just add to it, I would have it forever!

When made this way, there is nothing imitation about it. This is real vodka and real vanilla beans. Imitation vanilla is developed in a lab somewhere and a vanilla bean comes no where near it.

Make a big batch and enjoy real vanilla extract for a long time!

I havent tried it yet, but there has also been discussion on the Victoria forum...some suggest using white rum.

Bear in mind I make mine using Madagascar whole vanilla beans and buy them in bulk (twenty three pod packs) and I take four twelve inch long pods and slice them open and place in a half gallon jar with either vodka, or rum. Then let set for six months in a dark cool cupboard. Bear in mind I bake a lot each week and give a pint of the stuff as gifts, and was asked by a dear friend for some as her Birthday gift. Am pleased with the coconut extract I made as well. And I save the beans once the vanilla is gone and stick them in cane sugar and powdered sugar. And the seeds I scrape out and use when I make French vanilla ice cream.

1 coconut

Rinse the coconut meat under cool water and pat dry. Break the meat into 2 to 3-inch pieces. With the grater disk attached to a food processor, grate the coconut.

Place 1 1/2 ounces of the coconut into a 1-cup glass jar with lid and pour the vodka over it. Seal and shake to combine. Place in a cool dark place for 5 to 7 days, shaking to combine every day. Strain the coconut and discard. Return the vodka to a clean jar or to its original bottle and store in a cool place for up to a year. Reserve the remaining coconut for another use.
