Morning all!!
What's on your schedule for dinner tonight?
I'm going to make a good pot of chili when I get home from work. We will have it over elbaw mac noodles with shreaded cheddar and a dab of sour cream... :)

That is so funny! We are having chili too! We make ours with the cornbread over the top like a giant dumpling. when you spoon through you get a layer of cornbread and then the chili is underneath. Yum!

it's neat to see how people eat/serve their chili....we all have different ways, don't we? i just put it in a bowl and serve a roll or biscuit on the side. Do y'all put beans in yours?

Yep, beans in Chili, Melanie...I don't do more than beans, tomatoes, chili powder, garlic and onion, fresh diced jalapeno and a bit of chipotle pepper in adobo. It gives a nice heat, with a little smoke--I'm a total purist!!! We serve ours with tortilla chips, a little cheese and topped with green onions.
We are in the land of "Cincinnati Chili" which has greek origins, and has chocolate and cinnamon in it...over spaghetti with cheese and onions and beans. Not my thing, but it's a local treasure!!!
And, as for dinner tonight...I have NO idea! Probably use those two filets that are in the freezer, some horesradish mashed potatoes and steamed green beans. Quick and good Monday night meal.

I put either kidney beans or leftover pinto beans in mine but Ive been known to use others, depending on what I have. We are vegetarian so no meat of any kind here. So beans are necessary.

i always start with som ekind of beans....then some kind of ground meat (we have our own beef and pork) then I check the fridge and add veggies...I add a can of stewed tomatoes and let it simmer for hours

It sounds like most of us think alike too. Chili is in the crock pot. I use pinto beans in mine.

red kidney beans,diced stewed tomatos, ground chuck, red onion, crushed garlic, hot chilli peppers,salt, pepper , simmers for a day. Then is served with grated sharp cheddar, crackers and a combo of fresh hot peppers and onions. As far as dinner tonight, pot roast in the dutch oven with potatos and carrots, and of course dumplings
