A friend at work gave me this cookbook the other day called 5-Ingredient Cookbook.

I tried the beef noodle soup last night and my 9 year old loved it.
Noodle soup (serves 8)
1 lb ground beef
48 oz V-8 juiced
1 envelope onion soup mix
1 pkg beef ramen noodles
16 oz frozen veggies

cook/drain beef
Add to V-8, soup mix, contents of seasoning pkg from ramen, froz veggies
Bring to boil, reduce heat, simmer about 6"
Add broken ramen noodles; cook till noodles are tender

They don't make 48 oz size V-8 anymore; now it's 46 oz but more expensive... This recipe as is made this soup more like a stew. And the veggies only came in a 14oz pkg too...

This was very salty and I used a reduced salt onion soup mix. I'd probably reduced the burger next time or 1/2 and 1/2 it with veggie burger...add some water...and not include the packet from the noodles (has msg in it anyway). I might even used the low salt V-8 (but I like the salty kind) :-) It's definitely one of those "what's in the cupboard" kind of quick meals. Add a hearty roll and butter and you are good!

I also tried a recipe for Orange Buttermilk Salad...which is really a jellowy-whip creamy-kind of thing....

Orange Salad - 12 servings
1 can 20oz crushed pineapple
1 pkg 16oz orange jello
2 c buttermilk
1 pkg 8oz frozen whip topping; thawed (like cool whip)

Bring pineapple w/juice to boil in saucepan.
Add jello to mix/dissolve.
Take off heat. Add buttermilk.
Cool to room temp.
Fold in whip topping.
Pour into 11x7x2" dish refrigerate several hours or overnight.

Looked pretty in the picture and YUMMO!!! was really tasty! It's like orange fluff but thicker/with that buttermilk twang. It was really good. I think it's like a dish-to-pass sort of thing cause it made a lot.

I'll probably post a few others here as I try them. Some of them could certainly be amended to be a little more "healthy" or "diabetic" friendly. But with 5 ingredients...well...
