I just tried a recipe for sun dried tomato scones......my house smells yummy and they taste pretty good. They come out more like a regular biscuit than my idea of a scone but are great! Had to try out the recipe before i put it in jars to give for Christmas.

Here you go...

Sun Dried Tomato Scones/Biscuits

2c. flour
2t. baking powder
1 1/2 t. dried Italian Seasoning
1/2 t. salt
5 T. Vegetable shortening
1/4 c. sundried tomato sprinkles (I just ran some dried toms through the food processor until they were "sprinkles"
1/4 c. grated parmesan cheese
1 c. plus 3 T heavy cream.


Combine flour, baking powder, Italian seasoning and salt. Cut in shortening until mixture is crumbly. stir in tomatoes and cheese. Add the cream and stir until just moistened. On a lightly floured surface, roll dough to 1/2 " thick and cut out scones using a 2" round cutter. place on parchmentlined baking sheet.

Bake @ 425 degrees F for 6/8 minutes, or until they are lightly browned.

NOTE: Original recipe says you can brush scones with some extra cream and sprinkle with coarse salt before baking. I skipped this step, they have plenty of flavor without extra salt!
