I recently made a batch of red pepper jelly with the help of a friend, but she was slightly distracted throughout the process and I had never made jelly before...with the result that the finished product turned out quite solid and incredibly sticky (or perhaps gummy is a better word)! My friend thinks it might have boiled too hard. In any case, is there anything I can do with several jars of this stuff? Any way to fix it, or ideas for how to use it up? It won't spread at all - utensils get stuck in it - but it tastes good!

If I were you I would still use it some way. Id say use it in chili or try putting it with a block of cream cheese with a mixer and see if it makes a good dip. Ive made some tough jellies before too. If it doesnt blend with your mixer heat it with a little water in the micro if you have one, then blend it. It will be delish.

Just an idea :)

Remove from the jars and reheat until melted. Spray a baking dish with cooking spray and pour the jelly in that. When firm, cut into small squares and 'roll' in granulated sugar. Red Pepper Jelly Candy!

Perhaps you can save it and use it as a glaze for ham, roasted chicken etc. Just reheat until it liquefies.

I would mix it waith jarred chili sauce when you open the jars and simmer meatballs in it. Its a great party dish. Most people use grape jelly, but I have used pepper jelly. Its yummy.

These are all fantastic ideas. I knew I would get good tips from farmgirls! It will be great to see this "jelly" put to good use - I was very reluctant to have it go to waste. Thanks, everyone, for your advice!

Differant idea for the "cream cheese", mix 50/50 and use as a biskit or cracker spread, thats what we do with jalepeno jelly.
