Can anyone tell me how long to simmer a turkey carcass when making Turkey Noodle Soup. I have had it simmering for about 2 1/2 hours- but I have NO idea how long it should go- Thank you so much for the help!!

Since the meat is already cooked, I just simmer it until the meat pulls easily off the bones. Then I take the bones out and put the meat and stock in the refrigerator to chill so I can skim off any fat on the top.

There is so much left over! Natalie took some in a thermos to school today. So, if you don't mind leftovers- tonight would be good- swing on over and we can eat and then sew!!
