I have loads of pie pumpkins from my garden this year. Anyone have any suggestions other than canning? Any tips on pressure canning pumpkin? Thanks girls! Lucy

I really like to just freeze them I bake until tender then scoop out the pumpkin and then I put it through afood mill and freeze in 2 cup servings and seal a meal them closed after they are frozen solid.
I do can pumpkin, but do it in chunks(hot pack)..then drain and mash to use as needed. canning the puree, because it is so thick, isn't recomended.The chunks work really well. Most canning books will have a time and all for winter squash chunks. If not let me know and I will look up mine. I will be canning pumpkin this year too I think, we have some big ones out there!! I have frozen pumpkin before too, but like to can it best.
I only seed them, chunk them and then steam until tender, then I food mill it just like applesauce. I freeze it in containers for pie & breaad. Works perfect!
