I am looking for a good peanut butter cookie recipe and a good oatmeal cookie recipe. I made a recipe of peanut butter yesterday from the web and it was just blah.
The peanut butter cookie should be really peanuty and a little buttery. I dont mind if its crisp or chewy.
The oatmeal is chewy with lots of raisins and cinnamon.
Any good recipes out there?

These are so good Robin :) I LOVE this Oatmeal Cookie Recipe :)
Chewy Oatmeal Cookies
1 cup butter 2 cups brown sugar 2 eggs 1 1/2 tsp. vanilla 2 1/4 cups of flour 1 teaspoon cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 3 cups of quick oats 1 cup raisins (optional) 1/2 cup sifted powdered sugar for rolling and dusting.
Preheat your oven to 350 degrees. Line cookie sheets with parchment paper.
Cream butter and sugar in your mixer until smooth; add eggs one at a time and beat to combine. Add vanilla and beat 1 minute more. Sift flour, cinnamon, salt, soda, and baking powder together and beat on low speed. Add oatmeal and stir until just combined. Add raisins if desired.
Using a large cookie scoop (1/4 cup) scoop level balls and roll in powdered sugar. Place on cookie sheet 3 inches apart. Flatten slightly with a glass bottom dipped in powdered sugar. Bake for 12-15 minutes or until no longer shiny. Remove from cookie sheets.

My favorite peanut butter cookie recipe is:
1 cup peanut butter 1 cup sugar 1 egg
Mix well, drop by teaspons on cookie sheet and bake at 350.

Ok, these are the best peanut butter cookies I've every had. I know, ever one always says that there recipe is better, but these are really good.
Soft and Chewy Peanut Butter Cookies 2 cups all-purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1 and 1/4 cups dark brown sugar, firmly packed 1 and 1/4 cups white sugar 1 cup salted butter, softened 3 eggs 1 cup creamy peanut butter 2 tsp. pure vanilla extract
Preheat oven to 300 degrees. In a medium bowl combine flour, soda, salt. Mix well with a wire whisk. set aside. In a large bowl blend sugars using an electric mixer set at medium speed. Add butter and mix to form a grainy paste, scraping the sides of the bowl. Add eggs, peanut butter and vanilla, and mix at medium speed until light and fluffy. Add flour mixture and mix at low speed until just mixed. Do not overmix. Drop by rounded tablespoons onto an ungreased cookie sheet. With a wet fork gently press a crisscross pattern on top of the cookies. Bake for 18-22 minutes until cookies are slightly brown along the edges. Transfer cookies immediately to surface. As a variation, add 2 cups coarsely chopped chocolate chips to the flour mixture and bake. Enjoy! Maggie |

Oatmeal Peanut Butter Cookies
* 1/2 cup shortening * 1/2 cup margarine, softened * 1 cup packed brown sugar * 3/4 cup white sugar * 1 cup peanut butter * 2 eggs * 1 1/2 cups all-purpose flour * 2 teaspoons baking soda * 1 teaspoon salt * 1 cup quick-cooking oats
1. Preheat oven to 350 degrees F (175 degrees C). 2. In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets. 3. Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.

This is the one my famly loves adn request often. I have never had them get hard.
Old-Fashioned Oatmeal Cookies
2 c. raisins, boiled in a little bit of water 2 c. sugar 2 c. shortening 4 eggs 4 c. oatmeal 4 c. flour 2 tsp. soda 2 tsp. baking powder 2 tsp. salt 2 tsp. cinnamon 2 tsp. nutmeg 2 tsp. vanilla
Mix in order given. Drop on greased baking sheet. Bake at 350 for 10 to 15 minutes. These stay nice adn soft. If I do not have raisins on hand I have substituted craisins, dried cherries and dried blue berries all with great results.
This makes a really big batch but I always put some in the freezer to have on hand when we get really busy on the farm.

Robin you have to try this cookie. It is a very old recipe of my mother's and a family favorite. When I'm not feeling good or having a bad day my mom still bakes them for me it's like mom's version of a "happy meal". It is a different take on the oatmeal cookie. I promise you will not be disappointed.
2 sticks of butter or margarine 1 cup sugar 1 cup brown sugar 2 eggs 2 teaspoon vanilla 2 cup flour 2 teaspoon baking powder 2 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon nutmeg 2 cups rolled (old fashion) oats - do not use instant 2 cup coconut 1 cup chopped pecans
Preheat oven to 350. Line cookie sheet with parchment paper. Cream butter and sugar; Add eggs and vanilla, beat until fluffy; sift together flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture, stir until mixed; add oats, coconut and pecans stirring just until mixed well. Drop by teaspoonfuls onto cookie sheet. Bake for 12 - 15 min. Careful not to over bake. Depending on the size of your drops this recipe makes 4-5 dozen very good cookies.

Victoria, while it isnt the traditional one I was looking for, I can never be disappointed in a cookie with a pile of coconut!
