UGGGH.....My first attempt at making strawberry jam and it didn't "gel" I followed the directions right down to the lovely sounding "KLINK" I heard from each little sealed jar after a hot bath. ![](icons/icon_smile_big.gif)
I read on the pectin box that I should wait 2-weeks and then remake it. Anyone ever do that or should I just pitch it and start over again
Oh....the jam I made was (is) really strawberry and lemon marmalade. ![](icons/icon_smile_disapprove.gif)

Oh, please don't throw it away! I've found that sometimes it does take a few weeks for the jam/jelly to set. I've never had to remake it, though I have seen those instructions as well.
At the very least, you have a wonderful ice cream topping, or pancake syrup, or a stir in for yoghurt. Hope it works out for you! |

Hey Melody this is Melody. LOL
I did a batch without my mom one time and it did not set. I waited and waited but it just stayed liquid. I was going to dump it but called mom first and she said don't throw it away it is perfect strawberry syrup. Second she laughed and said it was that way cause I did it without her. LOL Really it had to do with when I added the sugar. She sent me a note with how to do it and I will find it in the morning and let you know. I have followed her instructions everytime now and it jells.

OK, I found the note. Actually I made two "oh poo's". I chopped my strawberries in my food processer, they are supposed to be crushed which released something natural in them that helps the jelling. 2. I added everything at the same time, I was supposed to add berries, pectin, lemon juice and bring to a boil then add sugar and bring back to a boil. Adding the sugar, before the pectin does it's job prevents it from jelling. Well now the whole world knows the things I've done right were learned from my mom, my mistakes were mostly when I did it my way!! LOL My mom was the best!

LOL So we think the same also. Who would have thought there was an order to put the stuff in the pot.
I have made it like that again just because it is a thicker syrup then when I just use the regular syrup recipe, so maybe there was a reason for the mix up!!

My strawberry jam didn't jell this year either. Well, the non-sugar batch did just fine, but the "normal" sugary batch is still very liquid. I just checked the jars and they still haven't set after 2 months. I wonder if I forgot the lemon juice, or miscounted and shorted a cup of sugar. I do that sort of thing at the end of a long day. |

What kind of sugar did you use? Cane or beet. I just heard on CBC that one woman said her mother told her ages ago to never use beet sugar for making jam/jelly because it won't set. Haven't got a clue if this is true or not. The idea of using it for a syrup is great. Works well. JoAnn |

Oh, I just heard that as well! I never usually check, just buy the least expensive, but this time I made sure to buy Domino because that's the only one that specifically said "cane sugar" on the bag! I haven't tried it out yet but I plan to this week. |
