Pictures on my blog!

This is a side dish recipe that has been passed down to our family 5 generations or more...yummy Succotash!
My sweet Mother made this when I was growing up, as her Mother and so on. It is still a "must" at our family gatherings! As you can see it would make a good little main dish because it has all the goodies in it to fill the tummy. Now sharing the recipe with you if you would like to try it!

Gloria's Succotash - NO LIMA BEANS! :)
(Most times I double it!)

2 cans green beans - drained
2 cans of sweet corn - drained, except 1/2 juice of 1 can
1/2 to 1 cube butter
1/2 medium onion - chopped (I always have frozen onions on hand)
1/2 lb. bacon - cut into pieces
salt, pepper and garlic salt (or garlic powder) to taste
~
Brown bacon and onion until fully cooked.
Add green beans, corn, butter, salt, pepper & garlic salt to taste.
Cook for a few minutes until slightly caramelized. Yum!

I love the "handed down" recipes - thank you for sharing. I wonder what my cooking would be like if I didn't have benefit of recipes from my mom, grandmothers and gr grandmothers, as well as their patient teaching. My husbands mom, grandmothers and gr grandmothers were inspirations as well.

I loooove succotash, but HEY! Where are the limas???? My daddy made it the same way (from Louisana/Arkansas way) but with lima's instead of green beans. I love the modification of recipes to reflect where we come from!

Thanks for posting...I just picked some green beans, and have some fresh corn that needs using up!

Would it work without the bacon, or would leaving that out ruin the whole point?

Hi Amiee, you can cook it without bacon. The butter, salt, pepper and garlic salt (or powder) will give it good flavor! Both ways it works!

Woo hoo, Maryjane, this was a big hit last night!!! I made the recipe exactly, only with 2 ears of fresh corn (parboiled first) and fresh picked Kentucky Wonder green beans snapped in quarters (also parboiled a bit) before tossing into the skillet.

Jus was eating the remainder for breakfast this morning, so that's a good comment--and this southern girl didn't even miss the limas

Hey MaryJane - made for hubby and I, only added 1 can of corn as we are both diabetic, and oddly enough we both love limas, so added a small can of those - it was great, it will be a welcomed side dish - hubby said, you can make this again (means it was good - best compliment I can get out of him). That's funny, Gail...my dad would either say that (like he was giving mom his permission) or "don't make this again" which never failed to make her stand up, pick up his plate right out from under him and scrape it off into the garbage before he could a)eat the other stuff or b) make another comment!!

Jonni - your dad and my hubby sound like they knew each other, he would never say "don't make this again" , he just says " that was alright", then I know it was a one time - unless I really like it, then I cook him something else. I have to admit, he isn't very picky, and we will be married 40 years on August 18th, so I will forgive him once in a while. He is a great dad, grandfather and hubby, actually my brothers and sisters always kid that if we ever divorced, they are keeping him and to heck with me. Have a great day!

Ha!! My hubby, who will eat anything, will never criticize what I have cooked, but occasionally, if I am really unhappy with something he will say "I've had worse".. which to me means it was pretty bad.

Oh yeah, I meant to post before regarding hubby's tastes & just his ability to eat almost anything.. this is the man that ate a sandwich with shaving cream & 2 pices of white bread, just cause his nephews asked him to. They were in utter awe & he chomped it down like it was nothing. So if says "I've had worse" I KNOW it must be bad.
