Here's the recipe for those extra eggs that I referenced on another site. I usually make a dozen at a time for quick dinners from the freezer.
PIE CRUST - makes 6 crusts(freezes well) 4 c flour 1/2 tsp salt 2 tsp sugar 1/2 c butter 1/2 c shortening 6 oz cream cheese 6-8 TBL buttermilk
Put flour, salt, and sugar in large bowl. Cut in cold butter, shortening, and cold cream cheese until small, even crumbs form. Sprinkle 6 TBL buttermilk into bowl, tossing crumbs with fork until a dough forms. Add more buttermilk if neccessary to get the right consistency.
Gather douch into a ball, wrap in plastic wrap, and chill in refrigerator for at least 2 hours. Remove from fridge and divide dough into 6 portions. On lightly floured surface, roll each ball into 11-inch round. Place in pieplate and bake 5 minutes until set.
QUICHE FILLING (per quiche)[I use whatever I have on hand] 1 9-inch pie crust (pre-baked) 1/2 lb cooked meat (sausage, ham, burger, salmon, etc.) 3/4 - 1 cup chopped veggies (onions, asperegas, spinach, etc.) 1 TBL olive oil 2 TBL flour 1/8 tsp pepper 3/4 c evaporated milk 4 eggs 1/2 c sour cream 1 c shredded cheese (gouda is excellent, fontina, cheddar, etc.) 1/4 c grated Parmesan cheese
Cook meat (if neeed). Heat olive oil in skillet and add veggies. Cook until crisp-tender. Sprinkle flour and pepper into p an and cook and stir until bubbly.
Add evaporated milk to pan and bring to a simmer, stirring constantly, until sauce has thickened. In large bowl, beat eggs with sour cream. Add milk sauce to bowl, add cheese. Place meat and veggies in bottom of crust. Pour egg mixture over the meat and veggies. Sprinkle with Parmesan cheese. Bake at 375 degrees for 20-30 minutes, until pie is puffed, set, and golden brown.
If serving immediately, let rest for 5 minutes before serving.
If freezing: cool quiche in refrigerator, then wrap, label and freeze. You can also freeze individual slices for quick, easy lunches.
THAW & REHEAT: Thaw quiche overnight in fridge. Bake at 350 degrees for 20-30 minutes, until heated through.

Thanks Kelly, I printed it off. I love new recipes, especially when I have all the ingredients in the pantry/freezer. This sounds like a good one and will make it soon. I think I'll start with onion/bacon. Just harvested a bunch of onions. Yummy |

You're welcome! I never make any two quite the same. I find myself throwing in whatever sounds good. I like this recipe for freezing though because it keeps so nicely!!!

Kelly, that sounds so delicious, but we can't do fat in our household. Would a quiche using just egg whites and skim milk products freeze as well? I can't imagine the crust would work since the fat is important for flakiness. Any ideas? Dang cholesterol!

Bummer Dana! You might try a "crustless" quiche and try the egg whites and skim milk products in a pie plate without the crust. I haven't ever tried it, but it might work....You might also think about making a shredded potato crust to line the pie plate with. I'm just throwing out ideas here. You'll have to let us know if you come up with a solution! :)
