Crumb Mixture:

2 1/2 cup all purpose flour

1 cup sugar

1 cup butter (softened)

1 egg

Filling:

10 ounces preserves

Heat oven to 350, in a large bowl mix crumb ingredients. Press about 3/4 of the crumb mixture onto the bottom on a greased 13 by 9 inch pan, spread preserves, and then crumble the remaining mixture over the top. Bake for 40-50 minutes or until lightly browned, cool and then cut into bars.

I got this recipe from my father, he uses raspberry but I used blackberry Danish Orchard preserved with chunks of blackberry in it.

That does look good, Lara. I will have to try that in a few days. I just made apple crumble 2 days ago. Still eating it. But that looks simple and quick.

Wonder if you could do this with apple sauce or sugar free preserves?

It is actually pretty quick! I made it in about 15 minutes while waiting for a friend to arrive and then baked it while we visited. I am sure sugar free would work, I can't imagine why not!

Perfect - I overdid it the first year I canned and am still trying to use up strawberry jam, sounds like the perfect solution - thank you!!
