Here is one of our favorite winter soup recipes:

As many potatoes as you need..I use 4-5 large potatoes
1 can chicken broth
1/3 cup butter
1/3 cup flour
3-4 cups milk
1/4 cup real bacon bits or crumbled up bacon
8 oz. sour cream
Velveeta cheese or sharp cheddar cheese(I use about 1/2 a small container of velveeta cubed up and then I add some shredded sharp cheddar)
salt and pepper to taste

Peel and dice your potatoes. Cook in chicken broth(you may have to add a little water to cover). Cook until potatoes are tender...pour off broth(reserve some) and put potatoes aside. Melt butter in pot...stif in flour and cook 1 minute. Whisk in milk and cook until starts getting thickened. Stir in potoates, seasonings, bacon bits and cheese. Cook until heated. Stir in sour cream. if soup is too thick add some of the broth back in to get the consistency you want.

*****you can also bake the potatoes and scoop them out and then proceed with the recipe. we just found that it gives a richer flavor to cook the potatoes in the broth...plus my hubby likes a chunky soupe.

Darlene, thanks so much for the recipe. I had some of this soup at a restaurant before Christmas and loved it. Now I can make it at home.

y'all are welcome! I like it because like most soups you can "play around with it" and do it your liking. I don't like chives but if you do they would be good in it. sometimes I get a packet of those baked potato fixins out of the produce for my hubby and he adds that to his.
