Aunt Jenny's Pumpkin Spice cookies
1 cup butter, softened 2 eggs 1 cup sugar 1 cup brown sugar 1 small can pumpkin (or 2/3 of the big can) 6 cups all purpose flour 2 tsp baking soda 1 Tbsp baking powder a pinch of salt 3 tsp cinnamon 1 tsp nutmeg 1 tsp ginger 1 cup pecans or walnuts, finely chopped 1 cup of raisins if desired Mix butter, eggs, sugars and pumpkin together in a large bowl. Beat until smooth. Add remaining ingredients and mix well by hand. Drop a heaping spoonful onto greased (or you can use parchment..that is what I do) cookie sheet...they don't spread, but they are puffy so you don't want them TOOOO big. Bake at 375 for about 15 minutes. These are wonderful warm from the oven, or cool too..and they are so good to freeze. I like them when they are still half frozen..yum!! You can also drizzle with a vanilla or almond glaze if desired..but I never do. If you live in Utah you may want to add chocolate chips but I NEVER do that either. I hope you enjoy!!!

Thanks Jenny! Have several cans of pumpkin so looks like I'll be making some cookies. Question, is the small can of pumpkin a 15 oz can?? |

Yes the 15 oz can is what I consider small. The bigger one is 28 or something ounces. I think 2 cups of cooked pumpkin is about what it amounts to.
