I was wondering if someone has any ideas about freezing winter squash. Do you need to cook it first? I bought a large banana squash yesterday and cut some off to cook today. Now I need to freeze the rest.Please help.

After it is cooked, remove the skin and freeze. Winter squash is a great freezer item.

agreed... i love freezing pumpkin so i can use it all year round! only thing i've found is if you boil squash, you can either let it sit and drain after you cook it or you can put it in the freezer right away and drain it when you've thawed it. baking it always took to long for me, so i boil it, though i've read not to simply for the water retaining factor. but if you strain it first before using it, i think it works just fine. i just store mine in gallon freezer bags in the freezer...
