This weekend my daughter and I made a delicious chocolate zucchini cake which included my first zucchini of the year! If you would like the recipe just visit my blog. I have posted it there. It is too yummy!!

I have only had the one zucchini this year but I have lots and lots of the yellow summer squash. I love eating it just steamed or sauted in a little olive oil. It was also great on the grill stuffed with some chrizo stuffing.

What else do you all do with your squash? I am running out of ideas!

That looks so wonderful, Christina. I have the recipe, but never tried it. I prefer cakes without frosting if they're moist enough. If you say it doesn't need frosting, I'll have to give this one a try.

You know people don't realize that while zucchini is a squash, it's such a mild squash that it will take on what ever flavor you cook it with. Zucchini is kind of a chamelion (sp?) in that you can make it taste like anything.

I bought a cookbook this spring that is just a little pamphlet basically all about squash. It has recipes for several breads, casseroles, and other dishes that use just about every type of squash. I had some yellow pattypan squash that got a little too large while we were away a few weeks ago, so I shredded them in my food processor and froze them to use later in breads and cakes. Hopefully it will work OK. There is a recipe for carrot-squash cake in there that I may use some of it for.
