I am in a serious rut this summer with my kids and their lunch menu. I am making way too much PB and J and mac and cheese. My 5 year old boy is suddenly eating like a big boy (ie ALL THE TIME)! I think if I make their lunches and snacks super nutrient dense, it will cut down on the grazing and constant "Mom, I'm hungry!" that I'm hearing all day. Any ideas?

We had smoothies for lunch today and I put a big bowl of fruit out at all times for the kids to "graze" on. We are just sick of sandwiches on hot days. The smoothies today had frozen mixed berries, bananas, vanilla yogurt and applejuice..yum!! Yesterday we had chicken salads....just some leftover roast chicken and some grated cheese on top of a regular green salad..with lots of tomato of course...my kids are good veggie eaters though....sometimes I make a platter of pretzels, crackers, cheese and cut up veggies and dips for each kid..they love that too.

Hummus with carrot and celery sticks is pretty good. You can make a tabouli salad. It's cool for summer, but filling. You can even place it on a bed of lettuce. Wraps, cook chicken and then slice it. Let them make their own sandwiches that way. just a few thoughts.

www.hillbillyhousewife.com has some great packed lunch ideas. And I think you are right- if you really pack in the nutrition then they should feel full a bit longer. And this might sound silly- but check out the "What to Eat When Expecting" book. Even though it is geared towards pregnant ladies, I think it is a great guide to making "each bite count". There are lots of ways to "hide" more fruits and veggies into a diet and it has recipes and meal ideas in it. Perhaps a growing kid isn't so much as a growing baby still in the uterus?

Today we are having:
homemade chicken salad croissants (with lettuce and tomatoes)
bing cherries
canteloupe
baked chips
pickles

My children also love:

Tacos
Chefs Salad
Wraps
Smoothies
Soup and Grilled Cheese

etc....ust make sure to serve fruit and veggies and you have a healthy lunch. Also- include dairy, if they can have it.

Yesterday I cut up cucumbers into spears, made guacamole to dip with chips, sliced up oranges, and made a cucumber gauc salad- just cubed cucumber and added guacamole to it- it was good..
