Okay, I posted this sort of in the Basil question yesterday but don't know if people caught it. I need good BASIL recipes!! I have a ton of it and don't want it to go bad. I think it was Frannie or Miss Wilma who said they made home-made pesto!

HELP!

I put mine in everything from omlets to spagetti sauce, meatballs and on a tomato sandwhich. You can dry it without a dryer. Turn your oven on 300, then once it's hot turn it as low as it will go and put the basil in on a cookie sheet. After about 20 minutes turn the oven off and leave the basil in overnight. I've dried all my herbs using this method and so far so great. Basil rocks!

I dried some basil tonight and the house smelled wonderful! Not only that, I then used it on the veggie burgers (I put the recipe in "Farm Kitchen" for ref. ) and it was great! I definitely agree. :D

Brooke, I put basil on everthing too! Fresh on sandwhiches, bugers, salads... ooooo make pesto! You can freeze pesto and just scoop out what you need onto hot pasta. It lasts forever in the freezer and always looks and tastes like you just stuck it in there yesterday :D. I even spread pesto on chicken breasts or fish when they are almost done baking.

You bet I'll be making pesto. Pesto is one of my favourites. Are you supposed to use fresh or dried basil for it??

Here is my favorite pesto recipe, it makes 4 cups:
1/4 cup walnuts
1/4 cup pignolis
3 tablespoons of diced garlic (9 cloves, you may want to cut back a bit)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/3 cup good olive oil
1 cup freshly grated Parmesan Cheese

Place the walnuts, pignolis, and garlic in the bowl of a food processor fitted with a steel blade. Process for 30 seconds. Add the basil leaves, salt and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is finely pureed. Add the Parmesan and puree for a minute. Serve, or store the presto in the refrigerator or freezer with a thin film of olive oil on top.

I also make a tomato basil salad by using grape tomatoes, basil, feta cheese, and chopped walnuts. Portions are up to you, toss with olive oil, lemon juice or balsamic vinegar, salt & pepper to taste.

I use basil in as a garnish for pizza, grilled vegetables, chicken & meat dishes too. Have fun using yours up.

Oh, this all sounds so good, and tomato basil soup and grilled cheese sandwiches... that would be sooo good. I am going out of town for a few days so I don't know if I can make the pesto til' I get back, but I will then. Thanks, girls!!!

When I was a teenager, I worked for an herb and gift shop that had a class on basil every summer. It included a lunch made of nothing but basil recipes. There was a pesto cheesecake appetizer and thai basil chicken salad...it was sooooo good. I have the salad recipe and will post it when I dig it out.

My pesto recipe isn't very sophisticated. I throw basil, parmesan cheese, garlic and whatever nuts I have on hand in the blender...never measure anything. Pine nuts and walnuts are my favorites, but pecans will work in a pinch. Then blend,adding olive oil until it's the right consistency. Salt and pepper to taste. I love, love, love pesto. One of my favorite pizzas is pesto, mozzarella and fresh tomato slices on a homemade crust. Yum!

I freeze it in a bit of water in ice cube trays so we can use it all year long.

Brooke, I've only ever used fresh and I always use more then the recipe calls for :)
