recipes for salsa and pear butter, if you have em'...

I went down to the pear tree last night after I got home and LORD-EEE will we have a harvest! That tree has more pears on it than I've ever seen--last year it got caught by the icestorm, this year the tree seems happy as a clam.

I sure would appreciate any water bath canning recipes you have for the pear butter. And, do you have to can salsa in a pressure canner?

My Gma is loaning me her "Canning Bible", which is the largest Ball canning book I have EVER seen....I can remember being an ankle biter and helping her can with this book (that was 29 and holding years ago)! I search thru it and see what I can't find ya.

It's funny, an attorney I work with called down this am to tell me that he was "out of his spice mix" that I made them all for Christmas (money was VERY tight, so I made handmade food gifts)..and apparently, they were a hit! So, I'm anxious to do more stuff for homemade. With all the pears I see on that tree, I should be set--sure hope folks like pears :)

My salsa recipe changes with the wind so that wouldn't be a good one to offer anyone else. I am very careful to add enough acid (vinegar and lemon juice) but it depends on what I have as far as peppers, tomatillos, tomatoes and onions exactly what I put in it.
Pear butter sounds wonderful. I hope someone posts a great recipe for it!!

Here is mine, Jonni:

Wash pears. Do not peel. Slice. Add small amount of water to start cooking. Cook until very soft. Press through sieve (I use a blender). To each cup of pulp add 1/2 cup sugar. For every 3 cups of pulp add 1/2 tsp cinnamon. Cook until thick, stirring frequently to prevent scorching. Pour into sterilized jars to withing 1/2 inch of top. Cap and process in boiling water bath for 10 min.

I love making fruit butters. They're so easy and they get gobbled up pretty quick here. Apple, plum and peach are the favs around here.

My salsa is like Aunt Jenny's, I pretty much just throw a bunch of stuff together, add the spices and cilantro until I like it, then can it in a boiling water bath. Tomatoes by themselves are acidic enough, I think. And if you like the mixture you made up fresh, you'll still like it after canning it. The best part of making/canning salsa is having a small bowl of tortilla chips next to the chopping block for continuous taste-testing!

Do you do that, too, Aunt Jenny? Mmmmm, I can hardly wait until the peppers and tomatoes start coming in. Salsa is one of my favorite things to can.

Here is my Gma's pear butter recipe...she made this so much in my childhood that I hated pears by Thanksgiving! But it is sooo yummy.

2 Quarts pear pulp (she said that it takes about 25 medium sized pears)
4 cups of sugar
1/3 c. orange juice.
1 tsp. grated orange rind.
1/2-1 tsp. cinnamon
1/4 tsp. nutmeg

Mix all ingredients well, cooking over medium heat until thick--roughly 35 minutes, stirring frequently. Pour hot into hot jars leaving 1/4 in head space. Adjust caps and process for 10 minutes in boiling water bath. Time is same for pint and quart jars...recipe makes 4 pints.

Thanks so much, Samantha!!! It sounds lovely--but I could understand, that, if your gran's harvest was anything like mine (looks like) it's going to be, I might be sick of pears, too!!! We're also going to make spiced pear cordial, too, for cold winter nights, so that's another use that I probably won't get too sick of :)
