Hello, I am looking for a substitute for corn syrup that I can use in recipes. I would like an organic substitute, Please. Thank you

Betty Jo,
For 1 cup of corn syrup in a recipe I use 3/4 cup of sugar (organic is available) with a 1/4 cup of water. Heat it until the sugar melts and use same as corn syrup.
This has worked perfectly in my recipes like pecan pie and sticky buns...whether or not it works in caramel corn I do not know yet. I haven't tried it.

Thanks Carrie. I need to get away from corn and it's products for a while. Hopefully it will help my digestive problem.

We use sorghum in everything!! It is all natural and has a wondeful taste!!

Thanks Darlene, I never thought of that. I a test to eating good but as my gut and health have very loudly yelled at me about a month ago, I haven't been doing a very good job. Now that I am unable to work I have to get back on track. Thanks for your help!

I've substituted honey for corn syrup in pecan pie. It does give it a honey flavor, but the consistency was the same and it was still yummy!

You can also buy agave nectar which is the same consistency but tastes more nuetral. Honey is great but its flavor does override the recipe. Agave comes from cactus and is available at some grocery stores and also at natural food stores and co-ops. We like it.
If your health is suffering, avoiding sweets altogether is better. Try some fresh fruit and lots of uncooked veggies...salad type stuff. You may have a yeast/mold thing going on and this will make it die off. I've been through it myself and this is the only way to really purge it from your system. Do three weeks of the sugar free, no fermented foods and you should feel much better...and you probably won't crave the sweets any more either!!

My digestive problem goes far beyond a mold yeast thing. I wish it was as that's an easy cure. At this moment I can not eat anything solid! Veggies are the worst. Kills me as I love my veggies raw or cooked with a shake of pepper. Tried to eat dinner last night only to be up all night and can't sit this morning with out a bottom ring. Have some testing Friday I hope they can pin point the problem this time. Went through this 7 years ago and after 2 years of doctors. They gave it a generic name IBS or microscopic colitis. I tried a dozen or more Rx's they all made it worse. Diet change, no wheat, no corn, no ........ It took 3 years and 20+ pounds (scary as I was down to 100) and not being able to leave my house for months. The doctors had no more ideas as they tests were normal. Finally I took matters into my own hands and tons of Imodium ( really 20 + tablets a day) and liquids,simple mashed foods. Took a year then I could start to eat again. I was good for about a year and then it hit again. This time I am also having severe back issues to. Maybe they are connected. Trying new doctors this time, maybe I will have better luck.
