I got this book for Mother's day. I think I like it the best for the dessert recipes that are healthier but I love it for the ideas of different ways to sneak in veggies. I buy marinara in #10 cans for $3 a can. Someday I plan on growing my own tomatoes and canning but for now this is the best I can afford. So I took 2 cups of steamed carrots and pureed them. I added them to the marinara and no one even tasted it! Next time I will make my own meatballs- I add pureed spinach to them. Then they are getting carrots, spinach, and tomatoes.
Another thing that is really popular here is that I make green smoothies- just spinach and bananas. I use this as the wet base for pancakes. I add pumpkin pie spice and they taste like banana bread pancakes and you can't taste the spinach at all..
Does anyone else have creative ways to sneak in veggies to favorite kid meals?

I could probably sneak spinach into meatballs, but not very likely that I'll get anyone to eat pancakes with green stuff in it;) I have been sneaking zucchini (well dd knew about it) into a mock apple crisp for several years now. But dd messed up and said something in front of her dad and blew it. He won't eat it anymore even though he loved it and couldn't get enough every time I made it! Oh, well, I guess it will be for company and potlucks from now on.

I guess I am lucky :-).. but my kiddos were already drinking green smoothies. The pancakes smell soooo good when they are cooking that no one asked about the green they were just ready to dive in. She has a recipe for a pink pancake that has beats in it- and one that has sweet potatoes.

Debra- You are the most clever gal!! (And the sneakiest mom.) I add grated carrots to my own spaghetti sauce, and no one knows it. Unless they are in the kitchen when I am grating them. I never thought of pureed spinach. Your right- in a meatball they wouldnever be able to tell. Hmmm, this may be a way to get hubby to eat more veggies. lol

You can't even tell. And when you add it to sauce even more so. If you can check out the book from your local library you will get lots of ideas. There is even a recipe for chocolate chips that has whole garbanzo beans in it that is supposed to be very good. I have put garbanzo beans and pinto beans into fruit smoothies and no one knew! Another good way to get more smoothie and get more beans into their diet. there is another book that is similar called sneaky chef.

I don't want to violate copyrights but I can share what I do. For a big batch of spagetti sauce (it was a #10 can) I took 2 cups of steamed carrots and pureed with a bit of the steaming liquid- I added this to the marinara. For meatballs- I make a huge batch so I can freeze some- like 5 lbs or more of meat and add about 2 cups of pureed spinach to it. the cookies are a regular choc chip cook recipe with 1 can of drained garbanzo beans added. if there is anything else you need let me know.

steamed cauliflower (then pureed) can be hidden in mac and cheese, pasta alfredo, cream of potato soup, clam chowder and mashed potatoes. and you can use frozen veggies for your purees.

I love this cookbook too! I tried the brownie recipe wondering if my kids would like them or would they taste the spinch and carrots hidden inside and cringe?! The brownies were a hit! And they got a good helping of veggies and they didn't even know it! I tried the banana bread recipe to see if my husband could get a little extra veggies and yep! He loved it! Carrot puree in there too!!

Debra welcome to the world of sneaking veggies!!! I never had a problem with my family eating veggies but my Nanny family is a completely different story!!!! They gag at looking at them. I first heard about the book on Oprah one day and thought what a unique book. I was sceptically. The first thing I made was the bars, the one with jam (The books at work and I'm home on sick leave)and spinach puree. They wolfed them. Next was the sweet potato pancakes, a little tough as they like very light colored pancakes. Then I topped them with a bit of special dust (Powder sugar shook out of a shaker) and pesto down they went. Next was the chocolate chip cookies with chick peas. Again they disappeared. I made the chicken nuggets. They too gone. I want to try the scrabble eggs with the cauliflower as the fist time I did not make a good puree. I also will add slowly as the boys only eat their eggs with whole milk mixed in and scrabbled with butter. Oh my clogging heart. The amount of vegetable you actually get in a serving it not a full serving per person but any extra you can get is a plus. Just be careful not to get caught.

i like the idea of the baked goods in the book. I'm not going to put the spinach in the spagetti though. I will put it on the side of the plate with a lovely garlic parmesan sauce. If they complain, they don't get desert. I require anyone sitting at my table to eat their age. My five year old must eat 5 of what ever is on her plate. My blood and day care kids all eat their veggies. I don't have a problem with new kids at the table. They see the others eating them and they do it. Two of them eat them at my house and won't touch them at home. Even my husband and guests are required to at least try what they are given. Nine times out of ten, it is a mental thing. They realize they love it.

When I first saw this book I was an unbeliever. Why would you need to hide veggies from your kids? My children ate everything, my daycare children ate everything. My 28 year old will to this day eat veggies rather then potato chips. But even then I was sneaking veggies into sauce and dishes. I was enriching them with veggies. Spinach in spaghetti sauce, cream of broccoli soups, lasagna always had veggies in it and as side dishes. Then I started my job as a Nanny. WOW! The boys looked at veggies as the enemy, gagging at them on their plate. I thought I had gone to another planet. What's wrong with you boys? Well their father would not eat his veggies so now the boys will not eat theirs. Lots of fast food, as mom is a busy medical student, daycare and school hot lunches were the norm. Dad's no longer in the picture, I'm the new Nanny, and mom wants them to a well balanced meals. So everyday I made sure they had veggies to try on their plates, everyday I throw them out, except mashed potatoes with tons of butter, salt and pepper. So I bought the book and it is working. The boys eat the recipes (thats an improvement, they are eating) and getting some veggies whether they know it or not. They still have veggies on their plate to try but what they don't know can't hurt them. My own children never ate baby food out of a jar. Mostly because i was to cheap to pay $50.00 a pound for meat (figured it out on day at the store and was blown away how much those jars cost when converted to cost for pound. Veggies included.) So they ate what we ate for dinner, ground right at the table. I am now a believer in the book as my nanny boys have been raised very different from my own 5.
